Chatham Hill Winery Opens in Downtown Cary

The winery had a soft opening at the end of June after several months of renovations at their new location on Chapel Hill Road.

About a year ago Jill, and husband Marek Wojciechowski, began talking with Sandy Jordan of the Cary Chamber and Ed Gawf (then) with the Town of Cary about a move to Downtown. Everyone loved the idea and a search for a location began. Chatham Hill Winery was previously located in an office park near RDU. Although it provided plenty of parking and flexible space, the location lacked a community, as it was situated in an office park up by RDU Airport. Urban yes, near housing and other retail outlets, no.

The move was planned for the Summer because that is when the enormous tanks that hold the wine are empty. Moving them full would have been impossible. Moving casks filled with wine was easier.
The new location is about 8000 square feet and includes an expansion of their winemaking operations. The front area includes a tasting area, wine sales and ample space for dining, tasting and throwing a party.

Plans include hosting events as was done in the previous location near the Airport. There is a beautiful room up front, with a dozen or so tables. New at this location is a beer license in addition to the license to sell wine (by the glass and by the bottle). Beer from local brewers will be featured. Music on Thursdays and Fridays and some light food options will eventually round out their offerings.

For now, Jill and Marek are putting the finishing touches to the new space and getting ready for the end of July to be a part of Cary’s Final Friday Art Loop. Local artists can show and sell their art on the spacious walls of the dining area.

Chatham Hill Winery moving to Cary

Chatham Hill Winery, which closed its tasting room and wine-making operation in Morrisville in late April, will be reopening on June 29 at its new building in downtown Cary.

Chatham Hill Winery has moved all of its operations to a building at 8245 Chapel Hill Road just a stone’s throw from Cary Town Hall.

The company had been operating at the Gateway Center office park in Morrisville since 1999, making it one of the oldest urban wineries in North Carolina.

Chatham Hill doesn’t grow any of its own grapes, though. Co-owners Marek Wojciechowski and Jill Winkler buy most of their grapes from farming partners in North Carolina’s Yadkin Valley region.

The winery specializes in variations of chardonnay, merlot, cabernet sauvignon and others.

Our new place in downtown Cary is ready and we are excited to be opening this Saturday, June 29. We still have the same fabulous wines, just in a new location - 8245 Chapel Hill Road. Also available for purchase is local Ashe County cheese in different flavors to compliment a glass or bottle of wine. Why not enjoy them out on our new deck?

With the new location comes new hours as well. Monday through Wednesday we will be here from 11am to 6pm. On Thursday and Friday we will stay open until 7pm...so don't go home without stopping in to see us first! Our hours on Saturday will be 11am to 6pm and Sunday is 1 to 5pm.

Opening a Bottle of Wine

Open a Bottle of Chatham Hill Wine

Some of us have struggled over the years trying to open a wine bottle. We either get distracted by the foil cover or the cork itself is a struggle. Maybe it's our opener or maybe it's just operator error. In any case, there are proper ways to open a wine bottle and we are never too old to learn. Take a few minutes a watch the video below. I think one of the best things to keep in mind is not to move around the bottle too much...and practice makes perfect. Chatham Hill Winery has openers such as the one demonstrated as well as plenty of wine for you to practice on.

Sunday

Just two days until that glorious morning.

I imagine to say it won’t be so boring.

I’ve wrapped, and I’ve cooked, 

I’ve decorated and looked,

For that perfect wine 

to be so sublime.

Bathrooms all scrubbed, rooms have been cleaned,

For family is coming and it all must brightly beam.

So with little left to do I patiently wait,

With a glass of Pinot Grigio for the day I know with fate.

Will bring all its chaos, packages here packages there.

Who gave the slippers, or better yet Uncle George his new fake hair.

The kitchen will be bustling with Grandma and Aunt Jo.

I’m staying out of the way with my bottle of Merlot.

The kids running around in endless circles.

The cat and the dog hide as to not end up crippled.

Meal on the table, blessing is said,

Then everyone eats, drinks and then fleds.

It will be back to the toys, the new gadgets and such,

Until the dessert is served and a little adult punch.

Sparkling champagne along with Chatham Hill Christmas White,

A toast to family and then they’ll be out for the night.

Yes I can see it, can see it so clearly now.

Christmas is coming no need to be down.

So I raise my favorite glass of Chatham Hill wine.

For soon will come a most joyful occasion and all will be fine.

Saturday

It’s Saturday morning. Oh no! Afternoon!

At least I’m waking up alone in my own room.

The office party was glorious, glistening and grand.

And I never seemed to be without a drink in my hand.

What was the wine? Oh yes, I remember now.

Local Chatham Hill wines that made my palate go, “Wow!”

I have it here somewhere, the website to go.

To find this urban winery and stop to say, “Hello!”

I’ve got to stock up on those wines I loved so much.

To the shower I go and then grab a good lunch.

I’ll then stop to see what wines I can taste.

And possibly a tour, I must get going with haste.

My Saturday afternoon, I treasure so dear,

But Christmas is coming. Christmas is near.

So off to Chatham Hill Winery I go to taste and to tour,

And to stock up on the wines you can be rest assured.

Recipe for Hot Mulled Christmas Wine

There is nothing better than walking into a room where a crockpot of mulled red wine is simmering (not boiling.) The aromas of spices, citrus and wine makes me think of snow, Christmas, family and peace on earth. What could be better?
Try this  recipe for Chatham Hill Winery that is made with their Christmas Red Wine, a semi-sweet red wine.

Chatham Hill Hot Mulled Christmas Red Wine
Ingredients
1 bottle Chatham Hill Christmas Red Wine
1 cinnamon stick
1 t whole allspice
6 whole cloves
1 T orange juice
¼ t ground cinnamon
¼ C sugar
Note: Chatham Hill Christmas Red Wine is a semi-sweet red wine.
Directions

1. Heat one bottle of Chatham Hill Christmas Red Wine in a crock pot (recommended) or a non-reactive saucepan over low to medium heat (do NOT bring to a boil).
2. Stir in remaining ingredients and continue to heat gently until sugar is dissolved.
3. Serve in coffee mugs and garnish with a cinnamon stick.

Friday ~ In memory of those from Sandy Hook Elementary

We will never forget when we heard such news.

How could this happen, how could we lose.

Such beautiful children with their futures so bright.

And adults who did everything they could with all their might.

Our hearts ache, our souls hurt, our mind can’t even fathom.

How could this happen? It seems so random.

We’ve learned the names, we’ve seen some faces.

We’ve prayed and we’ve wept, we’ve witnessed God’s graces.

So in the hustle and bustle of this holiday season,

Hug those close to you, even if for no reason.

It’s not the wrapping and bows, 

the meal or the wine you chose,

It’s love and peace, comfort and joy,

It’s family and friends and the time to enjoy.

Thursday

The days to Christmas just seem to go,

So quickly amongst all the ribbons and bows.

Tonight is the one night I have left to myself.
To gather the gifts off all of the shelves.

They’re piled up here and there, this way and that.

And that one just fell on top of the cat.

Wrapping paper and boxes, gift tags and tape

It seems too much to handle, too much to take.

But what to my wondering eyes should appear?

Why it’s a bottle of Vionier and now it becomes clear.

I pour myself a glass and at instant feel at ease.

I can get through all of it, it will be such a breeze.

So make your holidays easier, make them enjoyable and bright.
